- At the numerous requests of my subscribers, I present the recipe: "How to make SOFT ICE cream with your own hands at home."
To do this, we will need:
1. 0.5 liters of cream with a fat content of at least 30%.
2. Powdered sugar.
3. Waffle cones (cups).
4. Chocolate bar
Tempting soft ice cream is a favorite treat of millions of children and adults. Today I want to offer you three simple options for making delicious soft ice cream at home. We will prepare creamy, berry and dietary soft ice cream.
We will prepare ice cream without eggs and the use of special equipment, using a minimum of ingredients (from two to four, maximum). At the same time, we will not even mix the ice cream during the cooling process. A simpler and uncomplicated recipe for homemade soft ice cream is hard to find!
To myself, I call this recipe "lazy" soft ice cream, because cooking it at home is even easier than running to the store for it. Can't believe this is possible?! Try it and see for yourself!
There are only two components in our basic version of homemade soft ice cream: cream and natural condensed milk. The combination is so magical that you just need to mix all these components and cool – you will already get a delicious ice cream.
But if there is an opportunity, it is better to beat the mixture beforehand. In this case, the texture of the ice cream will be even more airy and delicate.
Combine the cooled cream and condensed milk, turn on the mixer at the lowest speed and whisk for 1.5-3 minutes. Add condensed milk in portions, tasting the mixture. As soon as it becomes sweet to your taste, there is enough milk. There is no need for any rigid proportions, everything is by eye and taste. I added 200 grams of condensed milk to 400 grams of homemade cream, and it was sweet - for my taste, even a little too much.

As soon as the beaters of the mixer begin to leave a distinct pattern on the surface of the mixture, it's done. Be careful and do not overdo it - it is very easy to overdo the heavy cream, and they will turn into butter. Therefore, it is not recommended to use a blender for whipping – the speed is too high.
At this stage, a simple creamy "soft ice cream" is almost ready. Place the mixture in an airtight container and send it to the freezer for 2-3 hours.
Whisk cream with condensed milk
You can add just one more ingredient to the base mixture – berries (fresh or frozen) or melted chocolate. It will turn out, respectively, berry or chocolate soft ice cream. I divided the mixture in half and added 100 grams of black currants and raspberries to each part, pre-crushed in a blender.

Place the mixture in an airtight container and send it to the freezer for 2-3 hours to cool. At this time and during further storage, the ice cream does not need to be mixed – crystals do not form in it. In a few hours in the freezer, the mixture will not freeze completely, but only cool down and acquire the desired consistency of soft ice cream.
Transfer the ice cream to a container
During further long-term storage in the freezer, the ice cream will naturally harden, but it is worth leaving it warm for a few minutes, and your most delicate homemade "soft ice cream" is with you again!

And the promised diet soft ice cream. To prepare such an ice cream, you will need only 2 basic components – thick Greek yogurt and frozen berries.
Just combine the yogurt and berries and whisk in a blender. If desired, add honey or sugar to taste. The texture of the finished ice cream depends on the number of berries and the density of yogurt. Lots of berries + thick yogurt = your soft diet ice cream in 3 minutes. However, the mixture can always be placed in the refrigerator or freezer for additional cooling.
