INGREDIENTS for 1 baking sheet (≈300g pumpkin candy)
▪️ 1kg peeled pumpkin pulp
▪️ 500g sugar
▪️ zest of 1 lemon + 1 orange
▪️ juice of 1 lemon + 1 orange
▪️ 1 cinnamon stick
▪️ 50g fresh ginger
▪️ 5-6 clove buds
▪️ 1 star anise
+
▪️ 10g icing sugar
▪️ 10g corn starch
🔴 DRY ≈ 3 hours at 195ºF / 90ºС
