INGREDIENTS for 300g pumpkin candy
▪️ 1kg peeled pumpkin or butternut squash pulp
▪️ 500g sugar
▪️ zest of 1 lemon + 1 orange
▪️ juice of 1 lemon + 1 orange
▪️ 1 cinnamon stick
▪️ 50g fresh ginger
▪️ 5-6 clove buds
▪️ 1 star anise
+
▪️ 10g icing sugar
▪️ 10g corn starch

PROCESS:
Combine all ingredients (except icing sugar and corn starch) in one pan.
Leave it for 6 hours or overnight.
bring to a boil and simmer for 5 minutes stirring occasionally. Then cool down completely,
Repeat 2-3 times.
Dry ≈ 2-3 hours at 195ºF / 90ºС.
Then roll in icing sugar and corn starch.
