Spooky BRAIN CUPCAKES for Halloween #shortsvideo

for 12 cupcakes
135g softened butter
2 eggs
70ml milk
1 tbsp vanilla extract
1/3 tsp black food coloring
120 g sugar
190g all-purpose flour
8g baking powder
20 cocoa powder

cream cheese frosting:
375g cream cheese
180g cream 32-35%
75g icing sugar
2 tsp. vanilla extract
🧠
raspberry coulis
250g raspberries
35g sugar
15ml lemon juice
6g corn starch + 1 tbsp cold water

PROCESS:
Using an electric mixer beat all ingridients on medium speed for 2 minutes until smooth. Spoon the mixture into the muffin pan lined with cupcake liners. Bake 25 minutes at 330°F / 165°C.
Let it rest for 5 minutes then place on a wire rack to cool completely.
Heat rasberries with sugar and lemon juice to make puree. Then strain to remove seeds. Add corn starch dissolved in cold water. Stir constantly while heating until thick. Let it cool.
Beat together cream cheese, icing sugar and vanilla extract until it smooth. Add cold whipping cream and beat again until smooth and thick.
Brush pastry bag with raspberry coulis and put the frosting inside. Scoop out some cake from the cupcakes. Fill it with raspberry coulis.
Pipe the frosting in the shape of a brain on top of each cupcake. Use raspberry coulis to make it more brain-like. Bon appétit!👻
