☁️ Japanese Cotton Cheesecake (Gluten Free & Super Fluffy!)

This soft and airy Japanese cotton cheesecake is incredibly light, delicate, and melts in your mouth!
Made without cream cheese, butter, or gluten, this easy homemade cake has the texture of a fluffy cloud and tastes even better than sponge cake.

Perfect with coffee or tea — and surprisingly simple to make at home!

🥚 Ingredients

* 4 eggs
* 4 tbsp sugar (80 g)
* Pinch of salt
* 1 container Greek yogurt (350 g)
* 2 tbsp rice flour (50 g)
* 1 tbsp cornstarch (15 g)
* Pinch of vanilla



🔥 Baking Instructions

Bake at 285°F (140°C) for 50–60 minutes.

✔️ Bake using a water bath
✔️ Top & bottom heat
✔️ No convection/fan
✔️ Middle oven rack
